Speakers
We are delighted to work with Tomé & Valery Andrade, owners of Cabo Vegan, the catering service preparing to open Cabo Vegan Restaurant & Market at 20 Main St. in Brockton, MA.
“Our food is Grown, Not Born.”
Tomé and Valery were born in Cape Verde, officially known as Cabo Verde, off the coast of West Africa. Inspired by a will to help animals, the planet, and the good health of the community, they create delicious vegan food with Portuguese and African influences. They refine recipes though extensive taste testing and experimentation to replace animal ingredients with natural plant ingredients.
They will teach a traditional Cape Verdean dish, Bacalhau De Nata (Cod Fish with Cream) which they transform to 100% plant-based through the use of jackfruit, hearts of palm, and banana blossom (all readily available in the marketplace) and their cashew creme sauce.
